A real classic that always looks great on any occasion! Fried berliners are a delicacy with cream or jam.
Ingredients
Sweet pastry For 12 pieces
500 g of flour
2.2 dl of milk
100 g of sugar
1 cube of yeast of 42 g
40 g butter, soft
2 pinches of salt
1 egg
2 egg yolks
flour to smooth out the dough
fry oil
sugar to garnish
ca. 200 g of jelly or jam, eg. of raspberries or apricots

How to proceed
Pour the flour into a bowl and form a hollow in the center. Let the milk cool. Add the sugar and dissolve the yeast. Pour the milk into the hollow and form a batter by adding a little flour. Cover the dough and let it rest for approx. 10 minutes, until bubbles form on the surface.
Incorporate the butter, salt, egg and yolks into the flour. Knead everything until you get a smooth and elastic mass. Cover it and let it rise for approx. 45 minutes. Knead the mass briefly and roll it out over a little flour into a 5 mm thick sheet. Cut out large washers of approx. 6 cm. Arrange them on a lightly floured baking sheet and let them rise twice in a warm place.
Heat the oil to 160 ° C. Fry the berliners a few at a time for 3–4 minutes. As soon as they brown on one side, turn them on the other side and finish cooking. Take them out, let them drain on kitchen paper, pass them in sugar and let them cool. Put the jelly in a pastry bag with a berliner or round spout and stuff the berliners.
Useful tips
To make the slices of dough rise faster, arrange them directly on a baking sheet lined with baking paper and let them rise in the oven at 50 ° C.
